Colorful and Tasty Winter Salad that is great as a main dish!

Yields1 Serving
 1 package of Luvafoodie Honey Mustard Lovers Dressing mix
 2 tbsp Luvafoodie Garlic Lovers spice
 3 cups butternut squash, peeled and cut into ½ cubes
 2 cups brussels sprouts, quartered
 3 tbsp olive oil
 ¾ cup farro, cooked to package instructions
 ½ cup dried cranberries
 ½ cup pecans, chopped
 4 cups romaine lettuce, chopped
Ingredients for Dressing:
 ½ cup olive oil
 3 tbsp apple cider vinegar
 1 tbsp lemon juice
 2 tbsp honey

Preheat oven to 425 degrees

Peel and dice butternut squash into ½ cubes place on cookie sheet drizzle with olive oil and 1 tbsp. Luvafoodie Garlic Lovers spice. Roast in oven for 30 minutes.

Quarter brussels sprouts and place in bowl, drizzle with olive oil and season with 1 tbsp. Luvafoodie Garlic Lovers spice. Add brussels sprouts to oven and roast with squash for another 20 minutes. Cool and set aside roasted squash and brussels sprouts.

Cook faro until tender according to package directions. Strain and rinse with cold water, set aside.

Prepare Luvafoodie Honey Mustard Dressing mix.

On a large platter or large bowl place greens. Add to the greens roasted squash, brussels sprouts, cranberries, farro and pecans.

Drizzle Luvafoodie Honey Mustard Dressing over salad.
