Perfect Valentine Dessert for two!

In a small bowl stir gelatin into water, set aside for 5 minutes.
In a food processor add strawberries, sugar, lemon juice and blend until smooth.
Transfer strawberry mixture to a small saucepan.
Warm the strawberry puree over medium-high heat, stir regularly and simmer. Simmer for 10 minutes, set aside.
Whip the cream in a medium bowl until it forms stiff peaks. Place the bowl in fridge.
Remove the strawberries from the heated mixture, then add the gelatin mixture and mix until well combined. Allow the mixture to chill to room temperature.
Fold the strawberry mixture into the whipped cream.
Pour mixture into 2 individual dishes, chill for 4 hours. Serve chilled.
Garnish with fresh strawberries.
