Great Summer Salad to serve for lunch or dinner!

1 cup uncooked orzo
2 mini cucumbers
1 cup grape tomatoes cut into quarters
2 tbsp chopped red onion
1 cup crumbled goat cheese
2 cups arugula
2 cups rotisserie chicken cut into chunks
½ cup grated parmesan cheese
2 tbsp chopped basil
Salad Dressing
2 tsp Luvafoodie Garlic Lovers
2 tsp Luvafoodie Citrus Lovers
1 ½ tbsp lemon juice
1 tsp honey
½ tbsp lime juice
1 tbsp orange juice

Cook orzo according to directions on box, after cooked cool withy cold water and drain.

In a large bowl add all ingredients except arugula.

Add to bowl orzo and toss.

In a small bowl whisk together salad dressing ingredients and set aside.

Divide arugula onto four plates, top with orzo salad.

Pour dressing over orzo salad.
