Fantastic chicken recipe, bursting with Moroccan Flavors!
In a large bowl, mix 2 tbsp. Luvafoodie Moroccan Lovers spice with lemon zest, lemon juice, salt and oil. Add chicken thighs and mix. Cover and refrigerate overnight.
Preheat oven to 375 degrees.
Warm the chicken stock.
Remove chicken from marinade, and pat dry.
Lightly coat the chicken with flour.
Heat oil in large pot over medium heat. Place chicken skin side down in pan. Cook for 4-5 minutes per side or until browned. Remove chicken from pan and set aside.
Add the onion and cook until softened, sauté for 5 minutes.
Slowly stir in stock and leftover marinade and lemon remnants and stir in olives.
Add 2 tbsp. Luvafoodie Moroccan Lovers spice, lemon slices and cilantro. Bring to boil and over high heat. Add chicken to tagine pot or baking pan. Bake for 40 minutes. Tagine can go into oven.
Discard parsley and lemon. Plate and serve.
