Goat Cheese

 1 qt goat milk
  cup lemon juice
 2 tbsp vinegar
 ½ tsp salt

Line a colander with three layers of cheese cloth.

In a sauce pan slowly heat goat milk until it reached 185 degrees. Stir frequently to ensure even heat throughout.

Remove from heat immediately: add lemon juice and stir a couple of times.

Add vinegar, stir briefly until it is all combined and allow you to sit for 30 minutes.

The curds will not be large, more like tiny specks.

Slowly ladle into the cheesecloth. Add salt and stir lightly.

Gather the ends of the cheesecloth and tie them with kitchen string. Tie to faucet. Allow it to hang and drip for an hour.

Place on cutting board and shape. Refrigerate when set.
