 1 6oz. Filet white fish (cod or swai)
 ¼ C Tomatoes chopped
 1/2 Lemon (juiced and Zested)
 1 tbsp. Luvafoodie Umami seasoning
 1 sm. Cucumber chopped
 5 Romaine lettuce leaves chopped
 ¼ C Red bell pepper chopped
 2-3 Tbsp. Feta
 Olive oil or Coconut Oil
 
LEMON DRESSING:
 2 tbsp Nonfat Plain Greek yogurt
 ¼ tsp garlic powder
 ¼ tsp Cumin
 ½ tsp lemon juice
 ¼ tsp Luvafoodie Umami seasoning
 1 tbsp. green onion

In a skillet over medium heat, add 1 Tbsp oil to skillet. Add ½ tbsp. Luvafoodie Umami seasoning to each side of the fish. Place in skillet with onion, and red bell pepper. Cook 7 minutes.

Flip the fish over and cook for 7 more minutes. (if not done - add 5 min)

In a small bowl mix: mix the lemon dressing ingredients and set aside.

Chop the Romaine lettuce, cucumber, tomato, and layer them on the plate.

Place the cooked fish on the salad, add the lemon dressing, sprinkle with feta. (you can always add more later so don’t over do it). Add a little lemon juice over top.

Wine Pairing Tips

I recommend pairing this with a lovely Sauvignon Blanc or a Pinot Noir that has notes of earth, crisp fruit or berry notes.
