1. Preheat oven to 375 degree.
2. In a blender or food processor mix: 1 cup of peanuts, garlic, ginger, coconut milk, sesame oil, fish sauce, Thai red curry paste, sugar, apple cider vinegar, red pepper flakes. Blend until smooth.
3. Spray pizza pan with non-stick spray.
4. Put pizza dough –roll out to cover pizza pan.
5. Top pizza dough with peanut sauce.
6. On top of sauce, add chicken, onions, red and green peppers and mushrooms.
7. Top with mozzarella cheese.
8. Bake pizza at 375 degrees for 10-15 minutes or until crust is brown.
9. Top with ¼ cup of chopped peanuts.
