 4 Sweet Potatoes
 4 tbsp. of unsalted butter
 2 tbsp. honey
 2 shallots chopped finely
 2 tbsp. cream
 1 tbsp. Triple Sec
 Dash Salt
 Dash Pepper

1. Preheat oven to 385 degrees.

2. Rinse sweet potatoes and poke each side with a fork.

3. Bake sweet potatoes for 40 minutes or until soft.

4. In a sauce pan add 2 tbsp. butter sauté with shallots, salt and pepper, cook until translucent about 15 minutes.

5. In a bowl add cooked shallots, honey, cream, 2 more tbsp. butter and triple sec mix together.

6. Cut baked sweet potatoes in half. Scoop out sweet potato add to bowl.

7. Mash sweet potatoes with shallot mixture, until chunky in texture.
