6

In a bowl with a hand blender blend cream cheese and sugar to the consistency of a frosting. Set a side for later.

7

In a bowl with a hand blender or in a Kitchen aid blender pour powdered sugar and add heavy whipping cream. Whip cream until whipped cream firms up.

8

In a food processor puree 1 pound of strawberries.

9

Dissolve the gelatin packets into the hot water and then immediately incorporate into the food processor with the strawberries. Give it a few spins to incorporate gelatin through the strawberries.

10

Immediately add the strawberry gelatin mixture to the cream cheese and sugar using the hand blender to incorporate. the cream cheese should turn reddish / pinkish.

11

Immediately fold with a spatula the whipped cream into the strawberry and cream cheese. Evenly fold until you have a consistently pink moose cheesecake.

12

Put moose cheesecake filling into the spring form pan with the crust. Put the Strawberry moose cheese cake into the refrigerator for an hour for it to set up.

13

Using additional fresh cut strawberries is really delicious with this cheesecake. I find it a little heavier on the whipped cream and prefer to have more strawberry flavor. I think the recipe would bring out more Strawberry flavor by cutting back the whipped cream by 1/2 cup and using 1/3 cup of powdered sugar. Over all people have loved it and even had seconds.
