Shrimp Scampi

A delectable Italian cuisine with a couple of spice and cheese that goes along with your date!

 2 cloves of chopped garlic
 2 tbsp. unsalted butter
 2 tbsp. olive oil
 2 tbsp. lemon juice
 1 tsp. chili red flakes
 1 tbsp. minced shallots
 1 ½ lbs. shrimp, peeled and deveined
 2 tbsp. flat leaf Italian parsley chopped
 1 cup of spring greens
 1 cup of fresh kale
 1 cup of sliced Brussel sprouts
 2 tbsp. olive oil
 1 tbsp. balsamic vinegar
 1/2 tbsp. fresh lemon juice
 1 tbsp. honey
 ¼ cup of goat cheese crumbles
 2 tbsp. chopped green onions
 2 tbsp. dried cranberries
 Dash of Salt
 Dash of Pepper

1. Sauté garlic and shallots in olive oil and butter. Add shrimp, chili flakes, lemon juice, salt, pepper.


2. Heat until shrimp is cooked through. Set aside


3. In a small bowl whisk together: olive oil, vinegar, lemon juice, and honey.


4. In a large bowl combine: greens, Brussel sprouts, kale, onions, green onions, goat cheese and cranberries.


5. Divide green mixture on two plates.


6. Top with cooked shrimp and pour dressing on top.
