A sharp, zesty flavor of shrimp in every bite!

1. In a food processor: Pulse together olive oil, 2 tbsp. lemon juice, basil, and garlic , salt and pepper until smooth.
2. Add pine nuts, and cheese, salt, and pulse until smooth mixture. Add additional olive oil if needed.
3. Set pesto sauce aside.
4. There will be leftover pesto sauce to use for another time.
1. Marinate shrimp in pesto sauce for 2 hours.
2. Preheat oven at 375 degrees.
3. Put shrimp in oven proof pan and bake for 10 minutes.
4. On a plate arrange lettuce, top with beets, onions, radishes, and feta cheese.
5. Top with shrimp.
6. Drizzle olive oil and balsamic vinegar on top.
