 1 lb. shrimp peeled and deveined
 1 bag of arugula
 2 tomatoes seeded and chopped
 3/4 cup of spicy tomato juice
 1 jalapeno seeded and minced
 1 white large onion chopped
 1 yellow pepper chopped
 2 cloves of garlic minced
 ½ cup of fresh cilantro chopped
 3 lemons juiced
 1 limes juiced
 ¼ tsp. salt
 ¼ tsp. pepper

1. In a medium size bowl mix together all ingredients except shrimp and arugula.

2. Toss in shrimp to bowl.

3. On four plates add arugula.

4. Top arugula with shrimp ceviche mixture.
