Portobello Mushroom Stuffed Cornish Game Hen

 2 Cornish Game hens (thawed day before if frozen)
 ½ lb diced Portobello mushrooms
 4 Small red potatoes
 4 small gold potatoes
 Olive oil (EVOO)
 ¼ oz Luvafoodie Chicken Lovers Spice Blend
 ¼ oz Luvafoodie Garlic Lovers Spice Blend

Preheat oven to 450 degrees

Rinse mushrooms, dice medium fine. Toss with 1 tablespoon olive oil, 1/8 oz. Luvafoodie Garlic Lovers spice.

Rinse game hens, pat dry, stuff with mushrooms, mix 1/4 oz. Luvafoodie Chicken lovers spice with 2 tablespoons olive oil in bowl.

Mix, then rub all over each Hen. Place in greased cooking dish.

Rinse potatoes, Chop into fourths, mix in bowl with 1 tablespoon olive oil and 1/8 oz Luvafoodie Garlic Lovers spice.

Arrange potatoes around Cornish hens.

Bake uncovered for 60 minutes.

Remove Cornish hens from pan and plate with potatoes.
