Elevate your next Thanksgiving dinner with this delicious stuffing recipe!

 1 pound loaf of white bread (cut into cubes and toast at 370 degrees on ungreased baking sheet, until light golden brown) about 20 minutes
 1 yellow onion chopped
 1 package of sliced mushrooms
 2 4oz. packages of Citterio Pancetta
 1 egg
 1 ½ cups of chicken broth or more to taste
 2 tbsp. of butter
 1 tbsp. of dry Sherry
 1 ½ tsp. fresh sage minced
 Dash of salt
 Dash of pepper

1. Cube loaf of bread and toast at 370 degrees until toasted. Set aside bread crumbs.

2. In a medium size pan, sauté butter, garlic, onion, mushrooms and Sherry over medium heat. Sauté until onions and mushrooms are cooked, about 20 minutes. Remove from heat.

3. In a large bowl mix together onion and mushroom mixture, with pancetta and sage.

4. In another bowl mix together egg and broth.

5. Add and mix together broth with rest of onion and pancetta mixture.

6. Add more broth if mixture seems dry.

7. Add salt and pepper.

8. Place mixture in a buttered casserole pan and bake for ½ hour.
