With Love from the Making Meals Matter kitchen to yours

1 tbsp oil (I used Avocado oil, yet olive oil is good, too.)
1 cup onion diced
½ cup red bell pepper chopped
1 cup defrosted mixed frozen vegetables (peas/carrots/corn/green beans)
1 small jalapeno seeds removed and diced (about 2 tbsp)
½ tsp Luvafoodie Garlic Lovers Spice
½ tsp Luvafoodie Jamaican Lovers Spice Blend
2 cups cooked long grain white rice
Garnish - fresh lime
Optional: fresh cilantro chopped as garnish
Additional Protein addition option: cooked chicken or shrimp or scrambled eggs

Heat the oil in a large frying pan or wok, and add the onion, red pepper, and jalapeno. Cook over a medium heat for 5 minutes, until soft.

Add the mixed veggies and rice and Luvafoodie seasonings and cook 5-7 more minutes (until warmed through).

Serve with fresh cilantro, slice of lime and protein addition if desired and ENJOY!
