 4 tbsp. Luvafoodie Jamaican Lovers Spice
 1 box couscous (Garlic & Olive Oil flavor)
 2 cups of baby carrots
 2 Chicken Breasts Skinless
 1 tbsp. slivered almonds
 3 tbsp. cherry preserves
 4 tsp. cherry balsamic vinegar
 2 tbsp. chopped scallions
 2 tbsp. olive oil
 1 tbsp. unsalted butter

Preheat oven to 425 degrees

On a baking sheet coat carrot with 1tbsp. olive oil and 1 tbsp. Luvafoodie Jamaican Lovers spice.

Roast in oven for 20 minutes.

In a saucepan melt 1 tbsp. butter, add almonds sauté for 1 minute.

Add couscous and 1tsp. of Luvafoodie Jamaican Lovers spice. Cook couscous according to package directions.

Coat each side of chicken breast with 2 tbsp. Luvafoodie Jamaican Lovers spice.

In frying pan add 1 tbsp. olive oil and chicken breasts.

Cook about 7 minutes on each side until chicken is thoroughly cooked.

Remove chicken from frying pan and set aside.

Cherry Sauce:

In same frying pan sauté scallions.

Add scallions, cherry preserves and cherry balsamic vinegar over low heat for 5 minutes.

Add 1 tbsp. unsalted butter and 2 tsp. Luvafoodie Jamaican Lovers spice.

Slice chicken breasts.

Plate couscous with sliced chicken breasts.

Top with cherry sauce.

Serve with roasted carrots.
