Delicious Meatless Monday Dinner for two!

Yields1 Serving
 2 8oz. filets of salmon
 1 cup of brussels sprouts
 1 cup of mixed red, yellow and orange cherry tomatoes
 3 tbsp. olive oil
 1 ½ tbsp. Luvafoodie Garlic Lovers spice

Rinse and cut brussels sprouts in half.

Rinse and cut cherry tomatoes in half.

In an oven proof pan add 1 tbsp. olive oil.

Put salmon filets skin side down. Top salmon with 1 tbsp. olive oil and ½ tbsp. Garlic Lovers. Bake in oven for 20 minutes.

On a baking sheet coat brussels sprouts with 1 tbsp. olive oil and sprinkle 1 tbsp. Garlic Lovers on tomatoes and brussels sprouts.

Roast in oven for 15 minutes or until down for tomatoes and brussels sprouts.

Plate salmon with tomatoes and brussels sprouts.
