Delicious pasta to make for dinner!

In a large sauce pot, add chopped onion, 1 tbsp. Luvafoodie Garlic Lovers spice. and 2 tbsp. olive oil. Sauté for 10 minutes.
Add whole tomatoes, break up tomatoes and simmer for 25 minutes.
Peel eggplant, cut into bite size pieces.
Add eggplant and cherry tomatoes to sauce, salt, pepper, sugar and 1 ½ tbsp. Luvafoodie Garlic Lovers spice.
Cook over medium heat for 25 minutes.
In large pot cook penne pasta to al dente (boiling water for 15 minutes minutes) Drain and set aside.
Toss pasta with eggplant sauce.
Top with parmesan cheese and chopped basil.
