 2 Cornish Hens (Thawed)
 Juice of one orange
 1 orange cut into 4 pieces
 1 medium yellow onion cut coarsely into pieces
 ½ cup of Robert Rothschild Farm Hot Pepper Peach Preserves
 4 cloves of garlic peeled
 Dash salt
 Dash pepper

1. Preheat oven to 380 degrees.

2. Rinse Cornish Hens and pat dry.

3. Put Cornish Hens in a large roasting pan. Add juice of an orange, cut up oranges, garlic, onions to pan, place around hens.

4. Top hens with hot pepper preserves.

5. Season with salt and pepper outside and inside hens. Baste hens occasionally with juice from pan.

6. Bake at 380 degrees for one 1 hour and 15 minutes.
