 6 Spring roll skins
 2 Slices firm tofu (¼ inch thick pieces) makes 6 strips
 1 Carrot (cut in ribbons with peeler)
 ¼ cup Crushed pineapple
 1 tbsp Luvafoodie Citrus Blend seasoning
 1 cup Chopped red onion
 1 Romaine lettuce leaf chopped
 1 cup Cooked rice
 1 tbsp Teriyaki sauce
 Sesame or Coconut Oil
 Optional: sweet chili sauce for dipping

In a skillet over medium heat, add 1 Tbsp sesame oil. Coat tofu with a little teriyaki sauce and sprinkle with ½ tsp of Luvafoodie Citrus blend seasoning to each side. Place in the skillet and cook for 4 min each side. Then remove from the pan and cut into logs.

Place a single skin in warm water for 2 min (until soft) and place on a plate.

3. Add rice in a long row ⅓ away from edge (like making burrito). Add a little teriyaki sauce to rice, then some seasoning, pineapple, carrots, lettuce, onion, tofu.

Roll it like a burrito: bring the edges up over the ends, turn 90 degrees, bring the skin over the top and roll slowly and tightly. Cut in half and serve.
