Enjoy the one of the zests in life with this delicious serving of kale!

Prep Time15 mins
 2 cups of Kale
 1 cup of shaved Brussel sprouts
 ½ cup shredded carrots
 2 tbsp. chopped green onions
 3/4 cup of craisins
 ¾ cup of goat cheese crumbles
 1/3 cup. Olive oil
 1 tsp. Dijon mustard
 2 tbsp. red wine vinegar
 2 tsp. of minced shallots
 1 tsp. of honey
 Dash salt
 Dash pepper

1. In a small bowl whisk together olive oil, red wine vinegar, shallots, mustard, honey, salt and pepper, set aside.

2. In a large size bowl mix together kale, Brussel sprouts, onions, and craisins.

3. On two dinner plates arrange kale mixture.

4. Top with goat cheese.

5. Drizzle with dressing.
