In a saucepan add water and boil beet until tender, about 15 minutes.
Remove skin from beet, slice beet and cut into heart shape with heart shape cutter.
In a small bowl, whisk together buttermilk, yogurt, lemon juice, black pepper and Luvafoodie Countryside herb seasoning. Set aside.
Preheat oven to 370 degrees.
In a small bowl, mix walnuts, coconut oil, coconut extract and cinnamon.
Put walnuts on a cookie sheet, bake for 5-7 minutes until toasted.
Plate arugula and kale on two plates.
Top with beets, walnuts, and goat cheese.
Top with countryside herb dressing.
