Delicious Turkish dessert to serve for company.

Yields1 Serving
 1/2 lb. dried apricots
 3 ¼ cup water
 1 cup mascarpone cheese
 1 ¼ cup sugar
 1 tbsp. lemon juice
 1 tbsp. rose water
 3 tbsp. pistachios finely chopped

Soak apricots in 2 cups of water for 5 hours in a shallow bowl.

Reserve the soaking water and drain the apricots.

Bring to boil reserved soaked water with sugar.

Stir until sugar is dissolved, boil syrup for 3 minutes.

Lower the heat, stir in lemon juice, rose water and apricots. Simmer for 10 minutes.

Remove the apricots out of the syrup mixture, reserve the syrup.

Cool apricots for 30 minutes.

Make a small slit one side of the apricot, stuff with 1 tsp. mascarpone cheese.

Place the filled apricots, cream side up, in a shallow serving platter.

Spoon syrup around the apricots.

Place in refrigerator to chill 1-2 hours before serving.

Sprinkle with pistachios before serving.
