Summer Cucumber Confetti Soup

Perfect for lunch or an appetizer.

  • Yields: Serve cold, serves 4- 6 depending on size of bowl


1 quart of buttermilk

1 large cucumber, peeled, seeded and finely chopped

½ cup finely chopped yellow pepper

½ cup of finely chopped red pepper

½ cup of finely chopped green onions

¼ cup finely chopped cilantro

2 tbsp. Luvafoodie Garlic and Green Herb Salt Free spices


1In a bowl combine and mix together all ingredients.

2Chill in refrigerator for 2 hours.
