Citrus Lovers Scallops over Zoodles with Mango Salsa

1 lb Fresh Scallops

3 1/2 cups Zoodles (Zucchini Noodles)

1 tbsp Luvafoodie Salt Free Garlic and Green Herb Spice Blend

1/2 tbsp Luvafoodie Citrus Lovers Spice Blend

3 tbsp Extra Virgin Olive Oil

2 tbsp White Wine

2 tbsp Orange Juice

Mango Salsa

1 cup Diced Mango

2 tbsp Minced Red Onion

2 tbsp Diced Tomatoes

1 tbsp Minced Red Pepper

1 tbsp Minced Jalapeno Pepper

1 tbsp Fresh Lime Juice


1Prepare Mango Salsa, Set aside

2In a Frying pan, sauté zoodles with 2 tbsp. olive oil and 1 tbsp. of Luvafoodie Salt-Free Garlic & Green Herb spice blend. Cook until zucchini is tender, about 7 minutes over medium heat, set aside

3In a frying pan, add 1 tbsp. olive oil, orange juice, white wine and citrus lovers spice blend, turn up to medium-high temperature

4Add scallops, sauté until scallops are browned about 8-10 minutes

5Plate zoodles on a platter, top with scallops and mango salsa

Serves 4 people, depending on serving size. Tasty Heart Healthy Dinner and Low Calorie.
