Ingredients:

  • 1 cup of butter, softened
  • 1 ½ cups of confectioners’ sugar
  • 1 egg
  • 2 tsp. of grated lemon rind
  • ½ tsp. of lemon extract
  • 2 ½ cups of flour
  • 1 tsp. of soda
  • 1 tsp. of cream of tartar
  • Ingredients for Icing:
  • 1 cup of confectioner’s sugar
  • ¼ tsp. salt
  • ½ tsp. lemon extract
  • 1 ½ tbsp. cream
  • Food coloring optional

 

Directions:

  1. In a bowl mix butter, sugar, egg, lemon extract, lemon rind.
  2. Stir in flour, soda, and cream of tartar.
  3. Put in refrigerator for 3 hours to chill.
  4. Heat oven to 375 degrees.
  5. Divide dough in half, put on floured surface.
  6. Roll each half into 3/15 inch thick.
  7. Take heart shape cookie cutter and cut out hearts.
  8. Put on lightly greased baking sheet.
  9. Bake for 7 minutes or until light brown.
  10. Cool for an hour.
  11. In a small bowl blend together 1 cup of confectioner’s sugar, salt and lemon extract.
  12. One drop of pink food coloring.
  13. Add cream and blend until smooth.
  14. Spread on cookies and decorate with colored sugar.
