Garlic Lovers Shrimp Summer Salad

  • Yields: Serves 2, delicious summer dinner. Serve with Black Cherry Martini.


20 deveined Shrimp

4 soaked and treated kabob sticks

1/2 tbsp Luvafoodie Garlic Lovers Spice Blend

3 tbsp Extra virgin Olive Oil

1/2 tbsp Lemon Juice

1/2 tbsp Balsamic Vinegar

1/2 cup Fresh corn kernels removed from corn on cob

1 cup of slice cherry tomatoes

1/2 cup fresh pineapple diced

1/2 cup of chopped red onion

2 cups arugula

1 cup romaine lettuce


1Pre-heat oven to 370 degrees.

2Put five (5) shrimps on each kabob stick.

3Place kabobs on cookie sheet, pour 1 tbsp. olive oil kabobs.

4Sprinkle Luvafoodie garlic lovers spice blend on kabobs.

5Bake for ten (10) minutes, set aside.

6n a small bowl whisk, together two(2) tbsp. olive oil, balsamic vinegar, and lemon juice.

7In a bowl mix together, arugula, romaine lettuce, corn, tomatoes, pineapple, and onions.

8Dividesalad mixture on two(2) dinner sixe plates.

9plate each plate with two(2) shrimp kabobs.

10Drizzle olive oil dressing over salad.
